Bak Kut Teh
Bak Kut Teh (Hokkien) or Rou Gu Cha (Mandarin) is a well liked dish in countries like China, Taiwan, Singapore, Malaysia, Thailand, Vietnam. When translated to English, Bak Kut Teh literally means “meat bone tea”. It consists of several types of spices and herbs, like star anise, cinnamon, cloves, garlic, Chinese angelica boiled together with pork ribs and bones for hours, to produce a delicious stew.
Bak Kut Teh was introduced, in the 19th century by Chinese workers from Hong Kong, Canton and Fujian in China. They loved the soup as the ingredients then, were not costly and it also gave them the much needed energy for manual labour. Bak Kut Teh is also commonly served with white rice or noodles, or even with fried dough sticks to be dipped in the soup.
There are many different ways to serve this delicious soup. In Singapore, there are generally 3 versions of Bak Ku Teh. The most common of the 3 is the Teochew styled Bak Kut Teh, where the colour of the soup is lighter but with more pepper. The Hokkien version is much darker in colour because the Hokkiens love to eat saltier food, so dark soy sauce is usually added. As for the Cantonese, they love drinking their Bak Kut Teh with a strong herb flavour.
There are a few different variants of this tasty soup where additional ingredients are added. Ingredients such as offals, mushrooms, lettuces and pieces of dried tofu are commonly used.
